Did you end up getting an insurance claim from this? Same thing is happening to me right now - USPS says package was delivered, but it is MIA. Went to my local post in Mineola, this one: http://www.shipdig.com/mineola-post...-mineola-ny/ - they say they cannot do anything for me...

This thread is about two years old right now and I don't think we ever had a final resolution posted.
Your local post office is pretty much right when they say "they can't do anything for you".
HOWEVER....
About 6 months ago I went through a similiar situation where USPS failed to get a signature on an insured package that I had sent to a customer in Arizona. The tracking showed that the item was available for pickup but when the customer went to the post office there was no package found. Needless to say it was very frustrating.
Eventually, I filed the insurance claim online and started the process. As expected the post office denied the initial claim. The claim was properly appealed and it was denied again. (I honestly believe the first two denials are automatic regardless of what the claim evidence shows.)
On the third (and final) appeal (which goes to HQ in Washington) the claim actually gets looked at by a real (or knowledgeable) person. After reviewing all the submitted paperwork, the statement of facts, the claim was approved. About 10 days later I received a check for the total amount of the claim (along with a refund for the postage) and a SOP letter of apology.
With the USPS you just have to be persistent, have all your paperwork and file your appeals properly. I strongly suggest using the online claim process.

In 8 or so months, I've had the USPS lose two packages out of approximately 200, and also had another one get to the destination with the contents removed... It never used to be like this.

Two out of 200 .. does not sound to bad .... except .. it should be none lost of 200 .....

The USPS is supposed deliver mail to a six sigma standard, no more than 3 defects per million transactions. 2/200 is totally unacceptable.

USPS is possibly the worst postal service in the western world. Expensive, slow and unreliable. I'm in Australia and make coin purchases from 20+ countries and I always expect US purchases to take longer to reach me than any other country. The longest wait I had was about 17 weeks (Ottoman zeri mahbub/gold coin and an R10 coin in rarity as it was a previously unknown date/mint combination). Currently waiting on a silver coin that tracking shows was ready for shipment on the 7th (2 weeks ago) at a NY airport facility. Only about 10 flights/day from NY to Sydney so why the delay?

One of them filed an ebay claim against me, and nothing ended up happening as the claim expired 30 days after he initiated it. I think he was an old, senile man who may have been losing his mind.

It's been great the last few weeks. They are really stepping thing up in my experience. For instance my SS went from socal to Massachusetts on Friday and for there Monday. I also had a registered package go to Colorado & only took 4days

All things considered, including my lost packages, I STILL think USPS does a pretty good job.

 About getting your congressman AND a lawyer in on this. In fact, you can copy and paste what you wrote here into a letter to your congressman with a CC to the manager of the post office, and the person who is reviewing the appeal. Name names in the letter so the congressman knows whose cage to rattle. I used to work for the government and we used to HATE it when someone got a legislator involved. Those guys (or more accurately, their staffers) can be a PITA. Be a thorn in their paw (or a bee in their bustle) until they make it right. For $500 it's worth the time and effort. Keep us posted how it all turns out. Sorry you had to deal with this.

Another good reason for mail and residential address to go to a PO Box, the mail and confirmation notice(s) never leaves the facility until you sign there at the post office and then take your package with you.
