Extremely difficult area of British coin grading. Edward was almost as bald as a Coot . Only the very first coins run would have had a healthy hair mass. Normally under graded for that reason. Your coin from the pictures show no signs of visible wear Just a flatter/weaker strike. Ear is sharply outlined as is the eyebrow line which you are lucky to see ever. There is a nice natural tone in the recesses which I would also expect to see but conservatively GEF/AU would be MS-60/61 on Sheldon only on the premise there might be something that is not showing on the picture. Very nice example which I bet looks 75% better in the hand

With Edward V11 in higher grades, I always look at the texture of the metal on the moustache, beard and the hair on the back of the head. Such an approach allows for stronger or weaker strike in these areas, due to die (not coin) wear.

I'd say AU-55 (US) as well. Most attractive.

Thanks, everyone for their comments. The coin was sold to me as AUNC, although I was leaning more to EF myself. It's nice to see that I was on the right track with my grade.
